Yes, and? Your capital ship is going to warp in facing the station, and the station can't move. Some of the biggest obstacles to hitting with a torpedo are solved for you automatically.

No. Small ships should be more maneuverable, and capable of short-term bursts of speed, but any ship should be capable of high speed when cruising to a far away destination, and bigger ships should be able to fit more cost-efficient thrusters.
If current gimballed turrets have technical problems as-is, but tripods work, then just use the tripod's tech and the turret's visuals.

That doesn't work in this game unless you're ok flying blind. There's no third-person camera here, which means your gunners and cockpit must be exposed.
