When buying ores or components it's kind of a pita to buy them as many are 1 per sell order. I gues this is in part because ther eis no stacking in inventory (why not?). But it means buying stuff is often a serious PITA..
Being able to set up buy orders for what you need at a price you'd be willing to pay is much more convenient and less time consuming. you can also just get back to your orders when you can.
