I think there is a way to build good looking ships that pose a challenge to the death cubes. Taking my building methods from Space Engineers, the best way to build ships is to have 2 layers:

I think a good exploration ship should be self sufficient. Having a ship that can mine, refine and defend itself increases its chance of survival when on long expeditions. I think having a single ship instead of a fleet on expeditions makes things much easier, as your only looking after one...
I love building multi-purpose ships. Planning to design an exploration vessel to aid in the journey to the moon. It will have Refineries, hangars, and all of the things required for it to be self sufficient during a long voyage in the void.
Really depends. In most cases I'd approach it as a friendly, and turn away if they told me to. But if I was looking to pirate materials, I would:
1) Save its location, scout it out outside of ship's visual range, and launch an attack if we had more firepower, or...
2) Stay outside visual range...
I think its more of a challenge rather than a practical idea, sort of a project to test the limits of the game. A bit like landmarks. The Eiffel Tower wasn't built for practicality, it was build to show off its designers skill and what could be achieved by architecture at the time.

It would be cool to have some sort of defensive shield so that bases would need to be carefully infiltrated in order for an attack to be launch. It could be similar to the shield gate on Scarif.
